Ker je \u00bbhitro vnetljiva\u00ab, jo zlahka pretvorijo v koristno energetsko obliko (ATP). Prav njena visoka vnetljivost pa je vir zdravstvenih te\u017eav. Zlahka se namre\u010d spaja z drugimi snovmi v telesu, zlasti z beljakovinami. Te postanejo oksidirane \u2013 glicirane. Glicirane beljakovine pa niso le pokvarjene in zato neuporabne, ampak tudi strupene. So namre\u010d sedemkrat bolj reaktivne od negliciranih. Povzro\u010dajo po\u0161kodbe \u2013 tako imenovani oksidativni stres, ki je vzrok mnogih bolezni in kon\u010dno smrti.<\/p>\n\n\n\n<p>Glukoza se \u017ee v krvi, na poti proti celicam, sre\u010da zmnogimi beljakovinami in se lahko z njimi ve\u017ee. Taka beljakovina (lipoprotein) je na primer LDL holesterol.<br>Temu pogosto pravimo \u00bbslabi holesterol\u00ab. Nevrologa dr. Perlmutter in dr. Bredesen ugotavljata, da to v resnici ni slab holesterol. Telo ga potrebuje za transport prepotrebnih ma\u0161\u010dob. Njegov problem pa je, da je molekula manj\u0161a od t. im. dobrega holesterola (HDL), zato prej oksidira. \u0160ele oksidirani LDL holesterol povzro\u010da po\u0161kodbe na o\u017eilju in soustvarja aterosklerozo. Prav glukoza pa je eden od dejavnikov oksidacije, kvarjenja LDL holesterola.<\/p>\n\n\n\n<p>Najbolj raz\u0161irjena beljakovina v na\u0161em telesu je kolagen. Ta elasti\u010dna beljakovina zagotavlja pro\u017enost ko\u017ee, o\u017eilja, kosti \u2026 Zaradi prese\u017eka sladkorja se ko\u017ea hitreje stara, kosti postajajo krhkej\u0161e \u2026 Znano je, da preve\u010d sladkorja v prehrani vodi v sladkorno bolezen (diabetes tipa II). Glukoza namre\u010d prihaja tudi v trebu\u0161no slinavko; \u010de je je preve\u010d, jo po\u0161koduje, tako da trebu\u0161na slinavka ne zmore ve\u010d ustvarjati dovolj insulina, hormona za absorpcijo glukoze v celice.<\/p>\n\n\n\n<p>Dr. Perlmutter razkriva v svoji uspe\u0161nici Po\u017egani mo\u017egani, kako prese\u017eek sladkorja v krvi povzro\u010da nevrodegenerativne bolezni. Alzheimerjeva bolezen je na primer postala \u017ee tretji najpogostej\u0161i vzrok smrti.
